Baking soda or sodium bicarbonate is a water-soluble powder that produces carbon dioxide gas when mixed with acid and causes baked goods to form and rise. There are different recipes which require the use of baking soda especially in pastries because without it, the dough or the pastry will not rise properly and you will not be able to create the perfect baked goods.

When using baking soda, make sure you correctly mix it with enough acid or else it will leave an unpleasant taste in your pastry. Here are some of the recipes which require the use of baking soda: Chocolate chip cookies, golden citrus cake, tea cakes, lemon pound cake, sponge cake, and, of course, any kind of bread.
