Some people are a bit confused with cornstarch and flour because they somehow look the same. They also have almost the same calories for serving with cornstarch having just a few more calories as compared to flour. The main difference between the two is their starchiness. Flour can often be used to thicken sauces, but cornstarch will have more power to thicken sauces more.

Cornstarch comes from the heart of the corn while flour comes from wheat. This is another difference between the two. There are times when people would substitute one for the other. This is possible as long as you know the right ratio to use.
