Diabetes is a medical condition that should never be taken lightly. A person with diabetes needs to always keep his or her sugar intake into a minimum and needs to maintain proper diet at all times. However, this does not mean that you cannot eat some of the Mexican dishes available today.

Here are just some of the Mexican food that a diabetic can surely eat without worrying too much if it will affect his or her sugar count: Southwest breakfast quesadilla, sweet-spiced sirloin on arugula with skillet corn, pork and green onion tortilla pileups, red cumin-lime shrimp, black beans and yellow rice, avocado cream cheese, beef and chipotle burritos, pepper pork tamales, brown rice-stuffed peppers, chicken and slaw tostadas, Mexican courn soup, chicken enchiladas, tamale pie and flank steak with corn salsa.
