Coho salmon is also known as river salmon, and it is like a chameleon when it enters different types of water. When it resides in freshwater, it has silver sides and dark blue backs. Upon entering the ocean, they have red sides and blue, green heads, and it has white gums and a black mouth. Coho fish has a distinct, mild flavor, and it is an orangey-red colored flesh.

King salmon has both black mouth and black gums, and it also changes color in various waters. In freshwater, the king salmon have the same silversides as the Coho salmon. However, their sides turn golden when it comes to the ocean. King is the most significant type of salmon, and it also possesses a high amount of oil content. The oil content of the fish gives it an extraordinarily rich and bold flavor.
