Yes, ravioli dough can be made without eggs but it won't taste as good and won'tbe considered authentic. It is the eggs that provide an important fat content and the shine on the dough.

Also, the protein in the eggs forms strands of gluten that give the pasta its structure and strength, so making the dough without eggs will work but the result may be dull and lack the nutritional content of the real thing. Unless you are allergic to eggs, make ravioli the proper way and enjoy your meal.
