Ravioli has many fillings and these are down to the ingenuity of the creator. Minced bacon is useful for fitting neatly into the little parcels and is typically mixed with tomato. I think finely cut onion, fried first, then with the bacon so that the two have that fried flavour before the tomato sauce is added, would be a wonderful filling.

some would put cheese with the bacon but I find this too rich and the flavour of one fights with the other. Don't forget basil or coriander with the bacon, onion, tomato filling. That will be superb.
