How can one describe what Mexican food is like?

There are various descriptions of Mexican food out there, the words to describe a certain dish will depend on who is saying it. This means that I can describe Mexican food as salty, while other can describe it as tasty.

However, for the purpose of giving an answer to this question, some words which can be used to describe Mexican food are as follows: 1) Hot – this is because some of the Mexican dishes have jalapeno peppers on it, 2) Spicy – this is probably because of the hot sauce used in certain dishes, 3) Authentic – but this is only applicable to the Mexican dishes that actually originated from Mexico or Mesoamerica, 4) Zesty – probably because of the lime commonly found in certain Mexican dishes, and 5) Cheesy – because some dishes are filled with cheese.
