What is the difference between Glycaemic Index and Glycaemic Load?

GI of a food is the time it takes for carbs to be converted into glucose in your blood stream and GL is the total amount of carbs in one serving of a food. So a high GI food may be a low GL. They are not the same. I would place more importance in the GL of a food.
