If you would be given a chance to choose between udon and soba noodles will you know which one is more ideal? Udon is made from salt, water, and wheat flour while soba noodles are made out of buckwheat flour. The thickness of these two noodles is also different.

Udon is usually very thick while the soba noodles are thinner. The color of soba is typically light to dark brown, and they are generally flat. In terms of appearance alone, you can already tell the difference between the two. Udon noodles come with a mild flavor, and they are usually served in soups or are deep-fried. Soba can also be used in salads.

Udon is quite thick when compared with Soba probably because of how they are made. Soba is made from a particular type of wheat called buckwheat, while Udon is made from white flour. The different types of flour used in making the two are what is causing the range of differences between the two. Researches have shown that, Udon noodles are traditional noodles of Buddhist priests while Soba noodles are very common among Tokyo people. However, Soba noodles are widely served more than Udon noodles.
