In saliva, which is the secretion of salivary glands, bicarbonate ions are electrolytes. They help in moistening food. Mucus is used as a lubricant, as well as for viscoelasticity. Amylase is what initiates the digestion of starch and helps in reducing bacteria.

It is an enzyme that is not only present in humans but also can be found in mammals. Lysozyme is an enzyme that destroys bacteria and helps in mineralization. While not a component of saliva, proteases are enzymes. These enzymes help proteolysis, which is the protein catabolism of peptide bonds, by using hydrolysis.
